Thai Green Curry Chicken

  • 6 Chicken thighs (cornfed is suggested)
  • 1 Onion
  • 10 Chestnut mushroom
  • 2 Red chilies
  • 2 Spring onions


  Sauce and seasoning

  • 250ml Coconut milk
  • 50g Green curry paste
  • 2 tb-sp Fish sauce
  • 1 t-sp Palm sugar (or brown sugar)

1. Rainse the chicken thighs, onion and mushroom and diced into bite size

2. Heat up a saucepan/pot with 2 table spoon of oil

3. Stir-fry the onion and mushroom, until the onion is in light golden colour. Put them aside

4. Add curry paste to the saucepan/ pot, stirring constantly over medium heat for about 2 minutes until aromatic

5. Add chicken thigh and stir to mix with the paste

6. Pour in the coconut milk once the chicken has covered by a thin layer of curry

7. Bring it to boil over medium heat

8. Add the fish sauce, sugar, sping onion and chilies to complete the flavour
