Thai Coconut Soup

  • ½ onion (optional)
  • ½ Lime 
  • 2 Chillies (optional)
  • 4 stalks Coriander
  • 4 stalks Basel
  • 100ml Coconut milk
  • 100g Baby corn
  • 200g Cheery tomatoes
  • 200g Chestnut mushroom
  • 500g Corn feed chicken thighs


  Sauce and seasoning

  • 1 Roi Tom Kha Paste

1. Dice the chicken thighs, mushroom and baby corn into bitten size

2. Evenly slice the tomato into half

3. Heat up a saucepan, pour Roi Thai Tom Kha Soup and bring to a boil

4. Add the chicken thighs, simmer until the meat is cooked (1 minute)

5. Add the remaining mushroom, tomatoes and baby corn, continue cooking in medium heat for 5 minutes

6. Remove from the heat and stir in the remaining herbs for 2 mins

7. Serve with steamed rice

  • For vegan, you may replace the chicken with tofu/broccoli
  • Roi Thai is the best paste I have ever tried, you're suggested to prepare the ingredients for the soup instead of buying a different brand of paste (80 ml coconut milk; 1 chicken stock; ½ stalk lemongrass; 3 thin slices galangal or ginger)
