  • 500g Pork belly/ Spare ribs


  Sauce and seasoning

  • 4 tb-sp Sweetened black vinegar
  • 2 tb-sp Soy sauce
  • 1 tb-sp Xiaoxing wine
  • 3-4 Dried sweet plums
  • 2 Ginger slices
  • 1/4 cup Rock sugar

1. Rainse the pork belly/ spare ribs well and diced into 1-inch cube

2. Heat up a pan with 2 table soon of oil

3. Place the rock surgar in the pan with medium heat, keep stiring to prevent they burnt

4. Once the surgar has turned to maple brown colour, add the pork belly/ spare ribs and quicky coat them with a thin layer of surgar


5. Mix the sauce and seasonings in a separate bowl

6. Pour the sauce into the saucepan and turn it to medium-low heat

7. Place a cover and boil for 20mins


8. You're ready to serve
