Sliced Pork Belly with Garlic Sauce

  • 500g Pork belly
  • 3 slices Ginger
  • 2 Spring onions
  • 1 zucchini
  • ¼ cup Minced garlic


  Sauce and seasoning

  • 2 t-sp Salt
  • 1 tb-sp Chilli oil
  • 1 tb-sp Sesame oil
  • 2 tb-sp Soy sauce (Hong Kong's fish soy sauce is the best to give a sweet flavour)
  • 2 tb-sp Chinese wine (Shaoxing wine 紹興酒)
  • 5 tb-sp Patchun Vinegar Sauce (Sweet Vinegar)

1. Prepare a pot of cold water

2. Add ginger, spring onion, Chinese wine and salt

3. Sliced the pork belly in half inch thick and wash them throughly 

4. Place the pork belly to the pot and bring it to boil

5. Once it boiled, remove from heat and leave it aside for another 10minutes (NEVER REMOVE THE COVER)

6. While waiting the pork, sliced the zucchini as thin as possible (mine ~1-2mm)

7. Mixed the sauce and garlic in a medium bowl 

8. Remove the pork belly from the pot and rinse it with cold water

9. Blanch the zucchini for 1 minute in the pot and place along a plate as decoration

10. Place the pork belly in the middleof the plate (you may add some garlic if you like)

11. Heat up 3 tb-sp of oil and pour into the sauce

12. Mix the sauce and drizzle on top of pork belly slices
