Radish cake

Ingredients
- 1kg Radish
- 50g Chinese sausages (臘腸)
- 50g Chinese bacon (臘肉)
- 1/4 cups Dried shrimp
- 1/4 cups Dried scallop
- 1/4 cups Dried mushroom
- 1 1/2 cups Water (extract juice)
Sauce and seasoning
- 1 t-sp Sugar
- 1 t-sp White pepper
- 150g Rice flour (粘米粉)
- 50g Corn starch (栗粉/ 生粉)
Steps by step
- Soak the dried scallops, dried shrimp, dried mushroom in boiled water for at least an hour
- Drain the water and preserve in a separate bowl (mix them together*)
- Diced the dried scallops, dried shrimp, dried mushroom, chinese sausages and chinese bacon into bean-size
- Trim the tops and peel the outer skin of the radish
- Grate the radish over a large bowl/ container
- Extract all the radish juices and preserve in a separate bowl above(*)
- Mix the rice flour and cornstarch in a mixing bowl with the surgar and white pepper
- Pour in 1 1/2 cup of water (the mixed juice*) and keep stirring, until it turns into a smooth creamy texture
- Heat a saucepan over medium-high heat (no oil needed)
- Add the ingredients above and cook for about 2 minutes, stirring frequently
- Add the grated turnips and cubes, keep stirring for another 2 minutes
- Pour in the mixture (step 8) and stay with low heat, keep stirring to form a creamy radish mash
- Lightly grease the cake pan with oil. Transfer all the ingredients from the saucepan to the cake pan
- Use a spatula to smooth out the top of the turnip cake and cover with aluminium foil
- Boil a pot of water and place the steaming rack in the center of the pot by making sure that the water level is just below the top of the steaming rack
- Carefully place the turnip cake on top of the steaming rack. Cover the pot and cook for 45 minutes (Test with a chopstick to ensure the cake is cooked)
- Remove the aluminium foil, and let the turnip cake cool completely before serving
- Sliced the cake into small squares or rectangles
- Pan fry each side until golden brown and serve the turnip cake with chili oil
Step's secret tips:
- You are suggested to dice a cup of Radish cube to enhance the texture of the cake (I ususakly keep the head and toe of a radish for this)
- As you peel the radish, if you notice that the outer layers are dry and fibrous, use a peeler or knife to strip away the dry layers. It is important to purchase a fresh and young radish.
