 Ingredients

  • 500g Fresh pork belly
  • 1/2 Medium onion
  • 2  Large scallions (white parts)
  • 8 Plump garlic cloves
  • 1 inch Ginger slice

 

  Sauce and seasoning

  • 1 t-sp Whole black peppers
  • 1 t-sp Doenjang fermented soybean paste (or miso)
  • 1 t-sp Instant coffee
  • 1 t-sp salt
  • 2 Bay leaves
  • 2.5L Water

1. Wash the pork belly

2. Prepare a pot with water and add all the brine ingredients

3. Bring it to boil over medium high heat, and continue to boil for 5 minutes

4. Add the pork belly and boil for 20 minutes, uncovered. Reduce the heat to low and covered, until the meat is very tender (around 40 minutes)

5. Turn the heat off, and cool the meat in the cooking liquid (Try to keep the meat moist)

6. Sliced the pork belly into 3-inch wide

7. Serve with the lettuce and kimchi

  • Keep any leftover meat in the cooking liquid. Boil the meat in the liquid to reheat. This prevents the meat from drying out
  • You may also wrap the meat in salted napa cabbage leaves along with radish salad (무생채) and salted shrimp
