 Ingredients

  • 2 Eggplants

 

  Sauce and seasoning

  • 1.5 cup Water
  • 1 tb-sp Soy sauce
  • 2 tb-sp Mirin
  • 2 tb-sp Tsuyu (つゆ)
  • 3 pieces Ginger

1. Wash the eggplants carefully

2. Place an eggplant on the chopping board and divide to two pieces vertically

 

3. Continue this process (target 2-inch wide each)

 

4. Slowly cut each eggplant (2/3 deep) and place aside (optional)

5. Mix the sauce in a bowl

6. Heat up a pan with some oil and ginger, place the eggplants and fried until they become light-golden colour

7. Pour in the sauce and place the cover

8. Turn it to lower heat and cook for another 10 minutes

9. Remove from heat and place the eggplants on a plate

10. Sprinkle some spring onion and katsuobushi to finish the decoration
